  • 115g butter
  • 250g heavy cream
  • 100g milk

  • 3 cups heavy cream
  • 2 tablespoons butter
  • Whole nutmeg
  • Fleur de sel
  • Reduce cream to 2/3.
  • Pass potato through mill
  • Brown butter.
